I believe a 17 in DEX is all that's needed.

Anything that you can backstab with would probably be best. So long and short swords, staves, scimitars, etc. I would not go the katana route because they are very rare- I believe I found one +1 katana the entire game.

So would you dual-wield with him?

Perhaps 2 longsword would be very powerful?

It's hard to say. The items you will find in the game are often randomized, so even if there is an epic axe in the game it might never show up in your playthrough.

Yes, dual-wielding long swords is a very good weapon choice.

In fact, as far as availability of enchanted weapons goes, long swords are probably the best weapon type of all.

This wiki page covers that question quite well imo. It's written for the BG(EE) games, but is also applicable to IWD:EE.

I've read that dual classes are amazing in this game.

    Why not:

    Bard
    Sorcerer
    Berserker 7>cleric
    Berserker 9>cleric
    Fighter/druid
    Elf FMT

Put one of the berserker>clerics on maces and the other on flails.
