    If you drop off a low level player and then pick them up later at a much higher level will their xp level be more to your suiting?

    No when you pick up an NPC it will be at a certain level depending on your level but once you pick up an NPC its level is set at whatever it was when it joined your party. After that the only way for it to gain levels is the old fashioned way (or using the cheat console of course).
