Core rules are fine in my opinion, since all rules apply.
Easy and Normal difficulty are basically story mode in my opinion, since you always get the max HP roll on level up, there's no permanent death or a fail chance when learning spells, and enemies do reduced damage. (50% for easy, 75% damage on normal.)

if you really hate permanent death, or the fact that you can fail at learning a spell you could go with normal mode - but then again you could also just run with the core rules and reload your last save if you do run into a situation where a party member dies or you fail to learn a spell without easy access to a 2nd scroll to attempt again.

Insanity. Because it reflects my frame of mind.

I usually play normal because I don't want randomised hitpoints. I've tried to set the difficulty to normal for level up and then back again to core, but I keep forgetting to change the difficulty.

Of course, there's the G3 tweakpack that maximises the hitpoint on level up (and eliminates spell learn failure chance), but I've noticed that the hitpoints are still randomised when importing a character (lower hitpoints on import in BG2 than on export in BG1), unless I set the difficulty to normal (at least I hope that helps, but I've never remembered to actually check).

You could always set the difficulty to core rules and turn the checkbox on for the "Max HP on Level Up" option in the Gameplay menu for the same effect; if you still want max HP but don't want the enemies to become weaker.

I've always been partial to average HP on level up. Max HP feels like cheating, regardless of how you achieve it.
