    I assume if you keep her as a thief,she still becomes a T/M in BGII?

    She spends SOD training as a mage. Doesn't matter what you do, same character

    Starts BG2 as thief dual classed to mage, stats are predetermined, spell book, everything. just like the other characters have different stats from BG to BG2.

    Imoen is not available as an active companion during SoD - her downbtime being explained as her going through training to become a mage - you can still have her dualclass early during the original game though - you can easily justify this as her learning magic on her own at first, before attaining a level of skill where she would ned to seek out a mentor to keep improving.
    As far as i know, you'll start in BG2 with her as a Thief 7 /Mage 8, which is attainable under the xp cap in baldur's gate 1 - Thief 7 takes 40,000 XP to reach, and it takes 90,000 to become a level 8 Mage - for a total of 130,000 XP. 160,000 being the xp cap without removing it altogether.

    That said, i feel like imoen is the only non-evil/crazy pure thief available until late in the game, so keeping her as a thief is probably the best option if you can't/don't want to pick up any of the other thieves the game has on offer.
    Personally i use the mod that relocates the companions that are locating in the city so you can pick them up early - it relocates Alora to an inn in Beregost, and i usually end up taking her along in favor of Imoen.

    The P&P rule books actually say the opposite, you need a trainer for levels 1-5 (and sometimes higher, I don't recall what class was what), then once you reach 5th level you have progressed enough that you can train on your own. I recall the DM using that rule to make the PC's work to duel class, since they had to find a trainer and convince them to train them in the new class (often involving a quest to prove their worth).
    It is like learning Karate or other martial arts that use colored belts. You need the trainer until you get your black belt, then you can train on your own.
