    1) Can you use ioun stones underwater?

Iridescent spindle Sustains creature without air

    2) The owner may voluntarily seize and stow a stone (to keep it safe while she is sleeping, for example), but she loses the benefits of the stone during that time.
How does that work with a:

Clear spindle Sustains creature without food or water?
    Do you suddenly become ravenous?

I don't see any reason they should stop working unless their user decides to stop using one conciously, or enters a dead magic zone.

In the case of the effect ending, i imagine you'd be more or less be okay - losing the ability to sustain yourself without air is fine if there is actually air around you - you might be in trouble if you are underwater though.
Personally, upon the effect ending i wouldn't have the player losing anything retroactively - for example, I imagine an item sustaining someone without food of water simply means the item is supplying the wearers body with the essential nutrients via magical ways. When you unequip the item/lose the effect, i'd rule they are hydrated/fed as though they have had a good meal in the last few hours, but they should start looking into actually procuring some food and water from that point out.

A person can last a good amount of time without food, and a day or two without water as well usually, so it usually shouldn't cause any problems, unless the characters are in a place where food and drink is particularly hard to get by - even then, there is the option of taking the magic item back out again/moving outside of the dead magic zone.

I suppose if the water is deep enough it might crush you and if deep enough the stone. Think of the limits for scuba divers. Outside of those extremes, you should be fine.
