    1) Are there bugs in BGEE and BG2EE now that it has updates/changes that come from SoD? Like the shaman class or anything else?

    2) I saw some info on the shaman class earlier today but for some reason I can't find it now. I'm trying to find out what races can be shamans?? What items can they use? Etc.

1: nothing gamebreaking in the original game portions, but some bugs were introduced to expansion content that is already available throughout the entire game.
When in doubt just check http://redmine.beamdog.com/projects/external-bugs it's a list of known bugs that they are working on at the moment. you can choose one of the subprojects to see the bugs for a specific game/expansion.

There's not so much new bugs in bg2:ee, since not a lot of new content was added. similarly, there shouldn't really be anything game breaking in the main game and TotSC expansion areas of bg1:ee.

2 : Only Humans, Half-elves and Half-orcs can become Shamans. (So you cannot be a shaman as an Elf/Dwarf/Halfling/Gnome)
here's the ingame description for the class :
