1. With two henchmen in my party (Deekin and Daelan) I now can't seem to assign either of their inventories to a quick slot. This is annoying me greatly... I know it worked just fine with 1 henchman. Is there any way to put their inventories on a quick slot?

2. Is there any way to make the map PERMANENTLY fixed on the screen? Having to bring it back and minimize it after every reload has been driving me nuts for ages.

You can assign inventories to quickslots? I guess I must really have a high tolerance for the inconveniences in this game! :)

You can in SoU and in HotU if you have just one henchman, but apparently not if you have more than that.
