Hi All,
I would like to play BG1 and BG2 with as many fixes as possible to make the game as enjoyable as possible. I playing through both with my character and will use Shadowkeeper to modify my NPC in BGII because I will be passing tomes unto some of them. Jaheria and Viconcia will each have a Wisdom of 17 by the end of my game in BG1, etc...
Besides Shadow Keeper and unfinished business does anyone else have recommendation for mods that will keep the game play of SoA as originally intended and fix any bugs that may exist.
Just so you all know I do plan on downloading the most recent patches for SoA.
And hopefully in the near future, maybe around xmass time, I will finally have ToB to play.
Any suggestion I will look over and decide if it is right for my game or not.

Pick up the Baldurdash fix pack. A lot of good fixes. The Questpack is pretty interesting too; the quests aren't "canon" by any means but they are very well done and add some new stuff to the games.

Unfinished buisiness (http://icelus.net/ub/) adds some ideas that were originally planned but latter dished by the game designers.
Ascensions (http://www.weidu.org/asc.html) Alters some of the bigger battles, and adds some end-game features that afair also were planned by Bioware to begin with (don't hold me on this!).
The redemption mod (http://www.onlinefiction.net/Redemption/Redemption.html) will allow you to redeem Irenicus at the end of the game (If your allignment is correct) and add him ass an joinable NPC
EDIT: An add-on to Ascension, so you'll need the above mentioned Ascensions mod in order to play out this one!
One Pixel studio (http://www.spellholdstudios.net/1pp/) Will alter things as paperdolls and items to live up with the quality BG1 offered.
The expanded thief stronghold mod (http://www.fortunecity.com/boozers/winelodge/79/) expands upon the original thief stronghold quest, in order to make the game more fun to play.
The underrepressented items mod (http://www.weidu.org/underrep.html) Will add some IWD2 items to the game that were somewhat overlooked.
Virtue (http://www.pocketplane.net/mambo/index.php?option=content&task=blogcategory&id=107&Itemid=82) Will add a new rep conter besides the original one. this rep counter will be set not by how the party is looked upon by the public, but how good/evil their actions are. NPC will react upon the virtu counter!
Though the ease-of use mod (http://www.weidu.org/ease.html) Don't actually have anything to do with originally planned ideas, it makes a many of the aspects of the game more bearable. Components like infinite potion stackings FX.
The tactics mod (http://www.weidu.org/tactics.html) should be installed if you found the game way too easy.
Banter Pack (http://www.pocketplane.net/mambo/index.php?option=content&task=blogcategory&id=95&Itemid=78) adds hundreds of new dialogues to the game.
The NPC Flirt Pack (http://www.pocketplane.net/mambo/index.php?option=content&task=blogcategory&id=104&Itemid=81) aims to correct some of the errors concerning romances in general. It also add some new romancing possibilities.
Oversight (http://www.gibberlings3.net/oversight/index.php) aims to correct various alignment errors (i.e. neutral paladins and such).
Revised Hell trials (http://adahn.gmxhome.de/download.html) adds a neutral path in the hell trials of SoA..
There's loads of other such mods out there, and you should definately start with checking the mods section here on SP.

I hate stacking items in the BG series. I an not a fan of having 200+ healing potions, etc... The only expection to that is arrows and I do just fine with the way BG1 is designed. So easy of use mod is not on my list of mods to add.

First of all, as UCLAP mentioned, you should get theBaldurdash Fixpack (http://www.baldurdash.org/ToB/Fixes/TOBfixes.html). It fixes various bugs in the game (Click the link to see the entire list of bug/rule fixes).
That said, none of the mods you're looking for is either SoA or ToB only mods, but mods that works with or without ToB, since it's mostly game fixes.
By the by, remember that the mods provided earlier should be installed after ToB have been installed. This is because the mods'll alter files in your dialog.tlk, your override folder, and so on... Installing the mods prior to installing ToB will most likely generate glitches and bugs.
The only ToB specific mod I can remember that'll meed your requirements is:
Throne Of Bhaal Enhancements From BioWare's Senior Designer David Gaider (http://www.sorcerers.net/Games/BG2/index_editors4.php) are additions that'll increase the difficulty lvl in various encounters with the tougher bosses, thus setting the difficulty lvl to what it were ment to be at first. Furthermore Bioware had planned to re-introduce some special bhaal powers obtained in the pocket plane trials in ToB. these are brought back with this mod.
