What happens to your experience once you meet the EXP point cap? Do you keep this experience and have it balanced out in ToB?

When you reach the exp cap, that's as far as game-recorded XP goes. If you replay the game or gain more exp, however, it will record it deep within the bowels of your character file. I played through SoA twice with the same character, one solo and one not, and when I started ToB I had ~4-5 million XP and was at LV23 in the beginning.

if you have installed ToB, the cap for the normal SoA game is increased to the 8million(or whatever) ToB cap.

and Avalance is right as well, about the game keep recording xp exceeding the cap in SoA without ToB

In other words, you don't lose the XP that goes over the cap in BG2, you just don't see it shown it in the game, nor do you progress any further in levels. But as soon as you install ToB, you'll be able to see & feel how much over the cap you actually went.
