Depends what counts as a "boss". One of the toughest fights I ever had was when I forgot to nail Limha outside the Fell Wood. She must have unlimited summoning spells, because I eventually ran into her with an enormous (and diverse) army of monsters that took forever to kill. But normally, Limha wouldn't count as a boss if you get her early.

I don't know if it counts but I loved the fight in Kuldahar after you come back from the Yaunti place. Just because you have to do so much fighting.
I also liked the Goblin fortress and Bridge, just because you get launch a full out assault on so many evil little creatures.

Well, I'm only in chapter five, so I expect the battles will get bigger and better. Yeah, the guardian in chult was really tough, but the four iron golems under the monastery really had me :aaa: shooting, ducking, and running...

My favourite battle is the last one for it's easy (read: difficult but not lame) and still not boring.
Guardian battle takes up to ten seconds with a properly developed mage. With penetration and transmutation feats the second or the third attempt at desintegration is bound to be succesful.
