1. Cloudkills
2. Use a Helm of Charm Protection
3. Fireballs
4. Why kill them? Turn invisible and walk past them.
5. Summon Skeletal Warriors (or regular skeletons if you aren't a 15th level Cleric)
6. Disintegrate them
7. Botl of Glory
8. Wand of the HEavens
9, Melf's Magic Meteors -- falling from the sky from the hands of five mages simulatneously
10. Spell Sequencer - Magic Missiles x 3

I agree to Kailynne, clodkills are excellent. Maybe the death spell is better for it has the same fulminant effect on umberhulks but no cloud that may block your way.
A conservative aproach:
Two strong melee characters with good AC and charm protection, backed up by two or three missile weapon chars safely behind works gereat as well.

If you end up having to take them down in melee anything that'll prevent their confusion robs them of their most devastating weapon. After that i think they're the same risk level as the standard fights. When they've got the mind flayer back up, that's when it get's a little trickier. Usually i hit the 'flayers first, then take down the hulks.

chaotic commands - this is possibly one of the most useful spells if youre up against umberhulks and mindflayers

I use death spell most of the time if there are several of them bugers, otherwise i just use a disentigrate(they have no items anyway.)
I just hate waiting for those stupid clouds to disapear.

well, i use death spell if i have it, if I don't.. then I try to concentrate a couple of fighters with an ok AC on one, then when it's dead go to the next one, and so on, in a group, if they attack a low level party they always kill me, try to lure them away from each other - haste ect - then chop away at them

I don't understand why everyone has so many problems with Umber Hulks! My lvl 10 (or less) Solo Berserker wasted them with Azuredge of all weapons. Wake one up, throw azuredge at them a few times, then Meleed them with Lilarcor. With 5 in Two Handed Sword, 2 in Two Handed Style, 1 in Axe, it was easy!
