Please please pleaaase help, how would a sorcerer go about killing a crystal golem?
Also are Doom guards supposed to be just a helmet shield and sword, and can you actually kill them?

You're playing a solo sorcerer? I guess he would have to be proficient in slings to even have an affect, or maces... i think they are pretty much magic resistant, though i haven't killed one in a while.

As for the doom gaurds yes they are just helmet, sheild, and sword, and yes you can kill them, though it might take some time or spells with a solo sorcerer, especially Vrassilus, the one with the Flaming Star +1.

try summoning creatures who do bludgeoning damage - like drowned dead

They nerfed the summons from animate dead in the patch. Somebody mentioned how to get them back though (you should be able to search through the threads).

Also the high level undead summons (green colored drowned dead lookalike) has an aura that can kill your own solo sorcerer if he/she fails a save.

I think you can still get drowned dead with the patch, but not festering drowned dead. I also think a solo sorcerer that can summon drowned dead will have a high enough fortitude save to resist the aura every time. Anyway, you can also try other summoning spells available to you.

I think you may be right as it has been a while since I played IWD2. I do recall one of my warriors dying from the aura though and they have the better fortitude save than my casters LOL.

I killed those crystal golems with my halfling rogue. David vs. Goliath. :D I took a sling and bullets of something really nice (don't remember the name anymore) I just ran, get a few shots, ran more, shoot a little more and so on.
Later on I just battered them down with my cleric (blunt weapon) and a monk.

The doom gaurds will attack you when you manage to get the key from the dead-iced guy near Varsillius?

I think you get some pretty good Bullets by that stage so use em. The doom gaurds wont attack you even if they see you fighting a golem. So run-turn back-shoot-repeat.

The key to kill the golems are your summons , same goes for the 'ice golem champions'. Just make sure you summon some zombie lords , the greater boneguards will get killed in an instant.

That's how I killed them , as a sorcerer you cannot kill them you are just too weak , you don't do enough damage.

Actually, the key to killing ice golem champions is the fire flail you get from Varsillius. Ice golem champtions take a load of extra damage from added fire damage but will resist magic.

There's only one way: blunt/bludgeon damage.

This can be achieved in the noble and virtuous way of manual pulping into oblivion, or by having someone else do that for you.

The former is best helped by tenser's shift. You'd be wise to have stoneskin and mirrror image on, too.

The latter is best achieved through binding elementals, of whom all deliver some blunt or bludgeoning damage. Earth elementals should be the most competent crew.

To damage those contructs with missile bludgeoning effect (sling bullet), highly enchanted bullets are needed (+3 or even +4 but I have not checked this). I did not possess such bullets that time, so melee bludgeoning weapons were used (e.g. Vrassilus's morningstar).
Of course (as written above) there are more comfortable ways to deal with those automations if the proper power is available.

A little tidbit on bludgeoning damage vs. crystal golems:
1. fists either count as -2 enchantment weapons or not a blunt weapons against crystal golems. They do -5 damage. The exception is the monk unarmed attack.
2. a regular blunt weapon does 5 points of bonus damage per hit. You get an additional 5 points of bonus damage for each point of enchantment. Thus, a +3 1d4 weapon will do more damage than a +1 1d10 weapon.

Do these damage attributes apply to Ice Golem Champions too?(I think so because those are almost identical to Crystal Golems)
Or to other similar creatures(contructs)?

This applies to anything that takes bonus damage from one of the three weapon damage types. I'm not certain about things like Ice Golem Champions that take extra damage from added elemental damage.

The last time I fought them it occured to me that the crystal golems as well as the ice golem champions are vulnerable to fire. Altough not magical fire but the elemental damage from the weapons you use.
