I am curious if anyone knows of any good reads in Scots English, like Robert Burns, or other English dialects. I would particularly like to see the interesting use of dialect words and spellings that match the dialect.

Books by Dorothy Dunnett - the Lymond ones might be what you are looking for. I read the first one a few months back and I think it had a bit of scottish dialect (and some odd english ones) although its definitely not as extreme as Burns.
Para Handy will also have lots of scottish dialects in it unfortunately I can't remember the author (there was a TV series about it too).
I'm pretty sure my parents have some at home but I'm at uni for another month or two and I don't know any others off hand.

There is a womens book by a woman named Diana Gabaldon called Cross stitch that has a lot of scottish dialogue, but not actually written in scotish-english. A bit disgusting in parts, and has a lot about sex, but it does have some interesting theories concerning time travel.

I was actually after real Scots English, you can't read it if you don't learn it.
