Here are today's Neverwinter Nights forum highlights, collected by NWVault (http://nwvault.ign.com). You can by using a custom set of phenotypes where the supermodel animations have the rootdummy elevated by X meter increments.
That's how I pulled off the flying mounted dragons.
Then custom, instant feats to fly up and down and scripted to adjust the phenotype as required, playing a custom fly up/down animation prior to the phenotype swap.

Then I duplicated the pseudodragon supermodel structure over and adjusted it's rootdummy node by half meter elevations per supermodel. Also added quick and dirty change elevation animations.
Made a set of instant feats for fly up, fly down, land and of course, fire breath weapon.
I'll have to find and dig up my test mod and make it available for you want to dissect it.

Worst case you can use a utility like RBJoy to remap gamepad buttons to keyboard or mouse actions.

Unfortunately this is a very rare issue with the game. As the dungeons are randomly generated, in very rare occurrences a dungeon will be generated that has no usable exit. My suggestion would be to reload a previous saved game from before you entered the secret room and avoid that area in the future.
