Well i haven't been playing on Morrowind for that long, and i was just wondering how many creatures there are on the game. I mean, I've met a few...
Nix hounds, Kwama foragers, Netches, Squibs, ghosts, skeletons and bone thingies. THats a few of them, because i can't think of any others of the top of my head, but anyway.
Can there be a brief description aswell.

THe list is actually fairly short.
Cliff racers, rats, Alits, Netchs (betty and bull), slaughterfish, Kagouti, Gaur, and Nix Hounds for 'regular' animals.
Squib, Kwama Forager, Kwama Worker, Kwama Warrrior, and Kwama Queen for the Kwama.
Skeletons of various stripes, Bonelords, Bonewalkers, Vampires (three kinds),and Ancestral Ghosts for the Undead.
Scamps, Dremora, Dremora Lords, Ogrim, Hungers, Daedroth, Golden Saints, the reptile guys, and the harpy things for the Daedra. (Forgot the name of the last two)
Ash slaves, Ash ghouls, Ash Zombies, Ash Vampires, and Ascended Sleepers for the Ash things.
The Dreugh are the acquatic humanoids you sometimes see in the water.
There is a pesky exploding beetle whose name escapes me.
Oh, and the various kinds of atronachs (elementals).
I think that is pretty much everything you will encounter in the game. The animals can be regular, diseased, or blighted.
Once you reach about 10th level all the animals, Kwama, and undead (except a few unique vampires) become pretty much just annoyances. I never met a scamp, ogrim, or Hunger that threatened any of my characters.
The other stuff, particularly some of the ash critters and the Dremora Lords (when equipped with two handed hammers especially!!!), remain a good threat up into the 20s (depending on your exact build and items, of course).

There are a few more than that.. basically, we were told that there are some 50 different kinds of monsters, but some of them are very rare. All in all, you get enough variation, in my opinion, especially at higher levels where opponents become more area controlled (you'll only encounter golden saints around the Grazelands, for example).
