I thought there might be, but I can't find any. I just got my character into Sorcerous Sundries, which is where I thought I'd be able to buy one.

Are there any stoneskin scrolls anywhere else?

There aren't any in BG1. Mirror image, ghost/spirit armor, protection against normal missiles & improved invisibility are the main protections for a mage before BGII.
