Go to the Temple District in Athkatla and get the Unseeing Eye Cult quest. Plenty o'Beholders on that one.

hmmmmmmmmmm, you say whare be thar beholders? arrr, those not for a 13 to take on is it? lol, anyway, here are some i know:
The 'cult of the eyless' (in the temple district)
The 'spectator' on the shaugugin (sic?) city (man he is funny, so i didnt kill him)
the beholder cavens in the underdark
a few gauths in the strange place where bhodi traps you (dunno its name, lol)
grater wyvrens are located in thetyer woods with a small group (2 actually) of wyvern belivers
hope this helps, our exitable little wrym..

There's also a beholder in spellhold, in the area with kobolds, umberhulks and a vampire. Look for a tome in the middle of a room.

There is also Director.
