On the record screen the character's favourite weapon is shown. If you keep using a particular weapon and it then becomes favourite weapon does that affect/improve your hit rolls.
One of the reasons my main character is always some kind of tank - fighter, paladin, now ranger - is that I ensure 18s in key fighting stats (19s if a BG1 import). The npcs aren't quite that good so they're using missile weapons in the main. Anyway, at some point I'll try a mage, I guess.

No, there's no effect on anything. That screen simply shows you statistics.

I think my Favorite Weapon might be bugged. My protagonist (LG Elven Archer) used a Long Bow and arrows for the first two chapters, but for the majority of the game (I'm up to Chapter 7) since then, he's dual-wielded bastard and long swords, and I'm pretty sure hes used them for a longer time than bow/arrows but it still says my fav weapon is Bow+Arrows...

That whole screen is kinda crappy. My F/M/T had still Bodhi as most powerfull vanquished after killing Irenicus in a sologame. As well as Armor as favorite spell, while I used that only in chapter one and early on in chap two.

Hmm I was wondering about that. I don't think anyone actually gets to kill Irenicus - that is get him to low hitpoints and then he has something to say, and THEN he dies. Maybe same with Lavok?

Irenicus can be killed. At least in Spellhold. And that makes your game - unfinishable. Nasty bug.
You may try it - cast Disintegrate on him or polymorph into Mindflayer and drain his INT.
But he means Irenicus in Hell.
As for Lavok, and Grae too (let's not forget the Mallet Quest) and Twisted Rune, the problem is in lame Bioware AI. Lavok won't go for the attacker if attacked - you may smite him if invisible or with area spells. Grae also will die without talking if you are invisible and attack her. The Twisted Rune boss will die without a word if you use area spells. And your game gets screwed. In Lavok's and Twisted Rune case the game becomes unfinishable. In Grae's case, Gong quest gets unfinishable.
But...
That's not the topic here, for god's sakes. :p
