what level should the assassin be at before dualing to a mage, so that you wont need Jan or any other character in your party to disarm traps?

Why do you keep asking about dual-classing? If you don't want NPCs, use multiplayer! Since you aren't starting at lvl 1, figure out what lvl you are satisfied for a mage. Then get up to that lvl with your thief and dual-class.

Needed level in BG2? It really doesn't matter - you can dual right after starting the game.

Assassin I think Your question should rather be "How much do I need in Detect and disarm traps"? I would say around 100. More than that is only needed in rare occasions. So if You only worry about traps. Then pick a 100 from the start and dual right away.
